Ingredients

  • 2 to 3 medium-sized tomatoes, roughly chopped
  • 2 cups diced mango
  • 1 to 2 green onions, chopped
  • 3 to 4 cups leafy greens (spinach, butter lettuce, or green leaf lettuce)
  • 1 to 3 radishes, thinly sliced
  • Β½ cup chopped cauliflower

For the dressing:

  • 1 tbsp lemon juice
  • 1 tbsp pure maple syrup (optional)
  • Β½ tsp mustard powder (optional)

Directions

  1. Place the tomatoes, mango, green onions, leafy greens, radishes, and cauliflower in a medium-sized bowl. Toss until mixed evenly.
  2. Whisk together lemon juice, maple syrup (if using), and mustard powder (if using) in a small bowl.
  3. Add the dressing to the salad, toss again, and serve right away.
